What does Shade Grown mean?
Shade Grown refers to pruned coffee trees that are planted between, under or among other trees such as banana trees. This helps to make a shade canopy in which birds and other animals can take shelter, which in turn helps to decrease or eliminate erosion and create a natural organic environment. It also creates a much more pleasant environment in which to work.
 
Why is it preferable to buy whole beans over ground coffee?
Air is the enemy of coffee and grinding makes all the small grains available to oxygen, which in turn makes the coffee stale.
 
What is the best way to store coffee?
Whole beans should be kept in a tightly sealed container. If you are not going to use your beans within a week, put them in a freezer ziplock bag and squeeze out the air before sealing. Always thaw the beans before grinding.
 
What is Acidity in coffee?
It is not really acidy, but more like a briskness. Dark roasted coffee is less brisk because as the darkness of the roast increases, different tastes become more obvious.
