| Shade Grown refers to pruned coffee trees that are planted between, under or among other trees such as banana trees. This helps to make a shade canopy in which birds and other animals can take shelter, which in turn helps to decrease or eliminate erosion and create a natural organic environment. It also creates a much more pleasant environment in which to work. |

| Air is the enemy of coffee and grinding makes all the small grains available to oxygen, which in turn makes the coffee stale. |

| What is the best way to store coffee? |
| Whole beans should be kept in a tightly sealed container. If you are not going to use your beans within a week, put them in a freezer ziplock bag and squeeze out the air before sealing. Always thaw the beans before grinding. |

| It is not really acidy, but more like a briskness. Dark roasted coffee is less brisk because as the darkness of the roast increases, different tastes become more obvious. |
